Bill’s Tomato Basil Soup
The initial plan for your Square Foot Garden is very much like a recipe …. It’s your starting point, with experience you perfect it over time. “Remember your goal is that no one can do it better than you.”
Here’s the recipe for Tomato Basil Soup we enjoyed at our workshop ….
½ cup sweet onion – coarsely chopped
2 tsp dried basil
2 Tsp Butter
1 Tsp olive oil
4 Tsp chicken broth
6 Roma tomatoes
1 Can tomato sauce
1 Pint heavy whipping cream
Steam your Roma tomatoes and remove the skins, place them in a sauce pan with the onions, butter, olive oil, chicken broth and basil. Sautee over medium heat until the onions are translucent, approximately 10 minutes or so. Transfer that mixture into a food processor, work in batches if necessary, blend it until thoroughly smooth. Return the processed mixture to the sauce pan and add the tomato sauce, bring the cooking temperature back to medium, cooking time 10 minutes or so, being careful not to allow the mixture to boil. Add the cream … add salt and additional dried basil to taste
Present with fresh basil leaves and dollop of sour cream optional. Bon Appetit!
